Tips: Garlic chives have a distinct flat leaf and garlicky flavor; regular chives can be used but are milder. Make sure to squeeze any excess water out of the chives after washing. Variations: Add finely chopped shrimp to the filling for a 'Three Treasures' version. Use cabbage instead of chives for a milder taste. Storage: Dumplings freeze beautifully. Place them on a tray in a single layer until frozen, then transfer to a bag. Cook directly from frozen (add 2-3 minutes to cook time).
