Ingredients

Instructions

  1. 1

Remove tenderloin from refrigerator 1 hour before cooking to bring to room temperature.

  2. 2

Preheat oven to 220 degrees Celsius.

  3. 3

Combine rosemary, thyme, garlic, and olive oil in a small bowl to form a paste.

  4. 4

Season the tenderloin generously all over with salt and pepper.

  5. 5

Heat a large ovenproof skillet over high heat. Sear the tenderloin on all sides until deeply browned, about 3 minutes per side.

  6. 6

Brush the entire tenderloin with Dijon mustard, then press the herb mixture firmly onto all surfaces.

  7. 7

Transfer the skillet to the preheated oven. Roast until internal temperature reaches 52 degrees Celsius for medium rare, about 25 to 30 minutes.

  8. 8

Remove from oven and immediately top with butter pieces. Tent loosely with foil and rest for 15 minutes before slicing.

  9. 9

Slice into 2cm thick medallions and serve with accumulated juices spooned over.

Tips, Variations and Storage

Tips: Use a meat thermometer for perfect results. The temperature will rise about 5 degrees during resting. Tying the tenderloin ensures even cooking. Variations: Create a peppercorn crust using crushed mixed peppercorns instead of herbs. Serve with a red wine reduction or bearnaise sauce. Storage: Leftovers keep refrigerated for 3 days. Slice cold for elegant sandwiches or gently rewarm in a low oven.
