Herb Crusted Beef Tenderloin
An impressive centerpiece for special celebrations, this herb crusted beef tenderloin delivers restaurant quality results at home. The fragrant herb crust seals in juices while adding incredible flavor.

Remove tenderloin from refrigerator 1 hour before cooking to bring to room temperature.

Preheat oven to 220 degrees Celsius.

Combine rosemary, thyme, garlic, and olive oil in a small bowl to form a paste.

Season the tenderloin generously all over with salt and pepper.

Heat a large ovenproof skillet over high heat. Sear the tenderloin on all sides until deeply browned, about 3 minutes per side.

Brush the entire tenderloin with Dijon mustard, then press the herb mixture firmly onto all surfaces.

Transfer the skillet to the preheated oven. Roast until internal temperature reaches 52 degrees Celsius for medium rare, about 25 to 30 minutes.

Remove from oven and immediately top with butter pieces. Tent loosely with foil and rest for 15 minutes before slicing.

Slice into 2cm thick medallions and serve with accumulated juices spooned over.
