In a large mixing bowl, combine rava, salt, sugar, grated ginger, turmeric, and yoghurt. Add 1 cup of water and mix well to form a smooth batter. If the mixture feels too thick, add a little more water until you achieve a smooth, pourable consistency.

Just before cooking, add the Eno fruit salt to the batter. Stir lightly and gently. The batter will become airy and slightly frothy.

Pour the batter into a microwave-safe dish or tray. Microwave for 5 minutes, or until the dhokla is cooked through and firm to touch. You can insert a skewer or knife into the centre to check — it should come out clean.

While the dhokla cooks, prepare the tempering. Heat oil in a small pan over medium heat and add mustard seeds, cumin seeds, white sesame seeds, hing, and curry leaves. Cook until the seeds begin to splutter and the curry leaves become crisp and aromatic. Turn off the heat.

Once the dhokla is cooked, carefully pour the warm tempering evenly over the top. Allow it to absorb the flavours for a minute before slicing and serving.
