One Pot Mediterranean Pasta
Everything cooks together in one pot for minimal cleanup and maximum flavor. Sun dried tomatoes, olives, and feta cheese bring Mediterranean sunshine to this incredibly easy weeknight dinner.

In a large pot or Dutch oven, combine pasta, diced tomatoes, sun dried tomatoes, olives, garlic, oregano, and red pepper flakes.

Pour vegetable stock over everything and add olive oil. Season with salt and pepper.

Bring to a boil over high heat, then reduce to medium high. Cook uncovered, stirring frequently, for about 15 minutes.

Continue cooking until pasta is al dente and most of the liquid has been absorbed, creating a sauce that coats the pasta.

Taste and adjust seasoning as needed. The olives and feta add saltiness, so season carefully.

Remove from heat and fold in most of the crumbled feta, reserving some for garnish.

Serve in shallow bowls topped with remaining feta and torn fresh basil leaves.
