    Combine soy sauce, mirin, sake, brown sugar, honey, garlic, and ginger in a small saucepan. Bring to a boil, then simmer for 5 minutes until slightly thickened. Set aside.

    Pat salmon fillets completely dry with paper towels. Season lightly with salt.

    Heat oil in a large nonstick skillet over medium high heat until shimmering.

    Place salmon skin side up in the pan. Cook without moving for 4 minutes until a golden crust forms.

    Flip salmon and cook for another 3 minutes for medium or longer for well done.

    Reduce heat to low. Pour half the teriyaki sauce over the salmon and let it bubble and glaze for 1 minute, spooning sauce over the fish.

    Transfer to plates and spoon remaining sauce over each fillet. Garnish with sesame seeds and sliced green onions.

Tips: Start with salmon at room temperature for even cooking. Do not move the fish while the first side sears or the crust will not form properly.
